Carrot Kheer





Ingredients:

Carrots – 2 medium sizes
Milk -1/2 liter (2 1/2 cups of milk)
Sugar – 4-5 tbsp
Ghee -1 tsp
Cashews – 10
Almonds – 10
Cardamom – 2
Saffron – a pinch (optional)

Preparation Method:

Soak cashews and almonds in water for 3-4 hours. Remove almonds skin and grind both coarsely.Grate carrots finely. (use the blade with small holes)Heat a tsp of ghee and fry the carrots till the raw smell goes.Boil milk and keep stirring till it reduces a little in volume.Then add the fried carrot and the cashew-almond paste.Cook for a few more minutes.Add sugar and let it dissolve. Remove from flame.Add cardamom powder and saffron (mix saffron with a little milk and add).Serve it hot or cold.
