Ingredients :
boiled basmati - 2 cups,grains separate and cooled
spinach - 2 cups,
shredded oil - 2 tbsp
1 tsp each of mustard seeds, cumin seeds, urad dal and chana dal
whole red chillies - 2
curry leaves - a few
onion - 2 chopped
grind:
coconut - 2 tbsp grated
green chilli - 2
ginger - a small piece
salt
puffed bengal gram powder/ or roasted peanut powder - 2 tbsp

green chilli - 2
ginger - a small piece

puffed bengal gram powder/ or roasted peanut powder - 2 tbsp
Preparation method :
Heat oil and add the temperings; when it crackles add onion and fry.add spinach and fry on slow flame for a few minutes more.add the ground mixture and needed salt.add rice and mix well; take care not to mash it up. sprinkle the gram or peanut powder and mix.garnish with coriander leaves and serve.
