Pork noodles



Ingredients :

Medium Egg Noodles, uncooked - 12 oz.
Pork tenderloin, trimmed of fat - 1 1/4 pounds
Oriental sesame oil - 2 tsp.
Garlic, minced - 4 cloves
Bottled minced ginger root or finely shredded fresh ginger root - 2 tsp.
Red or yellow bell pepper, cut into short, thin strips - 1
Snow pea pods or sugar snap peas (fresh or frozen) - 1 1/2 cups
Canned low-sodium chicken broth - 1/2 cup
Cornstarch - 1 tbsp.
Hoisin sauce - 1/2 cup
Low-sodium soy sauce - 1 tbsp.
Thinly sliced green onions - 1/2 cup
Chopped peanuts or cashews  -1/4 cup.



Preparation method :

1.Cook the  noodles according to package directions.Cut  the pork crosswise into 1/4-inch thick slices and  cut  the slices into  half.Heat oil in a large pan  over medium-high heat until hot and fry  pork along with  garlic and ginger  until pork is no longer pink.Transfer mixture to a bowl; set aside.Again heat oil in a pana and fry the bell pepper and snow peas.Mix  broth and cornstarch and add it to the above along with , hoisin sauce and soy sauce to skillet.Bring the above mixture  to a boil, stirring constantly.Add pork mixture and fry furthur  until pork is cooked through.Drain noodles spread the  pork mixture over noodles.Sprinkle with green onions.Garnish with peanuts, if desired.
