Ingredients:
2 cups – Basmati Ric
2cups– Onions chopped
4 tbsp – Ghee
1 cup paneer cubes
1 carrot chopped
¼ cup beans chopped
2 tbsp – Cashewnuts
1 tbsp – Raisins
Salt To Taste
1 Pinch – Pepper powder
2 – Cinnamon sticks
3 – Cloves
3 – Cardamoms
1/4 cup – Chopped coriander leaves
Preparation method :
Heat 1 tbsp ghee is a pan and fry rice for 7 minutes. Keep aside.Heat 1 tbsp ghee is a pan, fry cashewnuts and raisins. Keep aside.Heat 1 tsp ghee. Fry paneer and keep aside.Cook vegetables except onion and keep aside.Cook rice with cinnamon, cloves, cardamom, salt and four cups of water. Cover and cook until the rice is done on slow flame. Stir once a while.Heat remaining ghee and sauté onion till brown. Once done, add pepper powder, paneer, stir and remove from fire.Mix cooked rice with paneer- onion, vegetables and stir well.Just before serving take the rice in serving bowl, add the nuts and mix well.Garnish with coriander leaves.Serve paneer fried rice hot with raita.
