Ingredients:
2 cups – Basmati Rice
2 – Onions chopped
4 tbsp – Ghee
Eggs – 3
2 cups boneless mutton cut into small cubes
2 tbsp – Cashewnuts
1 tbsp – Raisins
Salt To Taste
1 Pinch – Pepper powder
2 – Cinnamon sticks
3 – Cloves
3 – Cardamoms
1/4 cup – Chopped coriander leaves
Preparation method :
Heat 1 tbsp ghee is a pan and fry rice for 7 minutes. Keep aside.Heat 1 tbsp ghee is a pan, fry cashewnuts and raisins. Keep aside.Scramble eggs with salt and a pinch pepper powder.Cook mutton with salt.Cook rice with cinnamon, cloves, cardamom, salt and four cups of water. Cover and cook until the rice is done on slow flame. Stir once a while.Heat remaining ghee and sauté onion till brown. Once done, add pepper powder, stir and remove from fire.Mix cooked rice with mutton, egg, onion and stir well.Just before serving take the rice in serving bowl, add the nuts and mix well.Garnish with coriander leaves.Serve mutton fried rice hot with raita.
