Ingredients:- 1 1/2 cups of rice
- 2 Tbs. soy sauce 
- 1/2 tsp. sugar 
- 1 Tbs. vegetable oil 
- 2 well beaten eggs
- 1/2 lb. ground beef 
- 1 chopped medium carrot
- 1 chopped celery rib
- 1 chopped scallion
- 1 tsp. minced fresh ginger
- 1 clove minced garlic
Preparation method:
Boil a medium pot of salted      water.Stir in the rice and boil      for 10 minutes (until done).Drain the rice and set aside      to cool.Mix the soy sauce, sugar,  salt and pepper in a small bowl and set      aside.Heat oil in a heavy nonstick      skillet over medium-high heat.Cook the eggs for about 45      seconds until eggs are set, stirring constantly.Transfer the eggs to a      different bowl and set aside.Add the ground beef, the      carrot, celery and scallion to a pan over medium heat.Sauté for 3 minutes,      stirring often to break up meat, until browned.
Stir in ginger and garlic      and cook for one minute.Increase heat to high and      add rice.Stir-fry about 1 minute,      until heated through.Stir in soy sauce mixture      and eggs and stir-fry 30 seconds longer.
